 10 Minute Chicken Piccata

Quick and tasty Chicken Piccata. It takes about 10 minutes to make and tastes like a restaurant. I made this last night and I actually impressed myself!

  • 2 Boneless chicken breasts sliced in half or 3 slices
  • 2 TBS Butter
  • 1 TBS Olive OIl
  • 1/4 cup flour
  • 3/4 tsp paprika
  • 3/4 - 1 cup dry white wine (can give or take according to taste add more if you are increasing recipe size)
  • 3 TBS lemon juice (can give or take according to taste add more if you are increasing recipe size)
  • Salt
  • Freshly ground pepper (white or black) to taste
  • 1 TBS Butter (for sauce at finish)
  • 3 TBS capers
Chef's knive; platter for dredging; sautée pan.

RINSE chicken breasts under cold running water, drain, put on paper towel. Pat dry.

SLICE the chicken breasts to desired thickness 1/8 - 1/4" thick. Unlike veal, chicken is better cut than pounded thin.

MIX flour, paprika, salt and pepper

DREDGE chicken in flour mixture.

HEAT butter and olive oil in sautée pan over medium heat; be careful not to burn the butter, if using it. Add chicken breasts - do not crowd the pan. Sautée for about two minutes per side. REMOVE to a warm platter; you can place platter in warm oven.

ADD lemon and wine to pan; DEGLAZE (Dissolve the remaining bits of food) the pan using a wooden spoon or spatula to scrape. This is the basis for your sauce.

BRING to a simmer, reduce heat to medium-low, let sauce thicken.

WHEN sauce is thickened, swirl in butter. Add capers.

POUR pan juices over chicken. Serve.

Enjoy!    ~ Miss D' Lish

Tomato Basil Pizza (Jessica MacDonald)

FRESH Tomato Basil Pizza

Ingredients:
Pre-made Pizza Crust (Boboli Brand)
Olive Oil
Jarred Minced Garlic in Oil
Mozzerella cheese
Pizza Sauce I use Boboli Brand
Parmesan Cheese
2 small oval shaped tomatoes
fresh package of basil leaves
pepperoni (optional)

Preheat oven to 325

Take your pre-made pizza crust and drizzle with olive oil spread on the pizza crust
Take a big heaping scoop of minced garlic and add to the crust. I use a lot I might even add (2) scoops its not as strong as fresh garlic so use a lot and spread all over crust and sprinkle crust with Parmesan.

Bake the crust at (325 -just the crust for 5 minutes - you can add a few more minutes but watch it closely)

Once the crust has had some time to bake in that flavor, take it out and spread your sauce. Add your mozzerella cheese. Thinly slice the oval tomatoes and spread all over pizza I add a lot of tomato covering every space. Add fresh basil leaves -  but leave half to add after baking. Add pepperoni (optional. I make half with tomato and pepperoni for my son. He doesnt like the basil so I do half tomato and basil for me :) Sprinkle parmesan all over the top.

oval tomatoes are very tasty

Bake again at 325 until cheese is melted about 10 min. If the basil has burnt toss it and add fresh. I always add fresh leaves to the pizza after baking - basil tastes it's very best fresh on this pizza. This is my favorite recipe and its pretty easy. I added lots of short cuts!

Lean & Mean Meatloaf (Gena Lee Nolin-Hulse)

 Gena Lee's ~ "Lean & Mean Meatloaf"!!

Just wanted to thank Gena Lee Nolin-Hulse for contributing this great recipe! I am all for healthy alternatives to great traditional dishes and this one is EXACTLY THAT!! Can't wait to try her Lean & Mean Meatloaf recipe.

Gena Lee's ~ "Lean & Mean Meatloaf"!!

Depending on how many you're feeding.. I always go for more so we have left overs.

  • @ least 3lbs of Lean Ground Turkey
  • 3 eggs
  • 1 1/2 c. Honey BB-Q Sauce
  • 1 pkg. of Crumbled Crackers - ( saltines)
  • 1 pkg. of Ranch Seasoning
  • 1/2 white onion (minced up)
  • 1 tsp. Cracked pepper
  • 1/2 tsp. Garlic powder or Fresh pressed Garlic

I always combine my eggs, bb-q sauce & mixture without the turkey, so its mixed well before adding the meat. Then, with your CLEAN hands, get down and dirty -- Mix it up!

On a cookie sheet lined with foil, create a large almond shaped mound with your turkey... Once you've made the perfect mound, drizzle honey BB-Q sauce until completely covered. Mmmmm...

Cover with foil and bake for 1-1-1/2 hours at 400'... Or I use a probe until the meat reaches 170 degrees.

The last 15-20 minutes take the foil off so you get a crisp, golden meatloaf!

I always serve with a fresh vegetable & yummy mashed potato's!

Enjoy!

Homemade Pasta

 Homemade Pasta

I found this super easy and fun Pasta recipe on Pioneer Woman's website! It had a step by step recipe that was so easy to follow! It's so much fun to make with your kids! Let's get started!

The recipe calls for only two ingredients!!!! Gotta Love that!!!

1 egg for every 1/2 cup of flour! That combo is the perfect amount per person so for our family of four I used 4 eggs and 2 cups flour!

Combine eggs and flour in large bowl and mix with your hands till you create a dough ball.Work the dough on a floured surface till it's smooth and not tacky.

Separate your dough into manageable portions to roll out. I separated mine into two. Roll out the dough as thin as you can.

I used a pizza cutter to cut very thin straight strips.
Gently peel the strips off the cutting surface and collect on a plate.
Add cut pasta to a boiling pot of salted water and cook for approximately 2 min.

Drain and add your favorite pasta sauce!
Te Da!!! A super yummy, totally impressive, fun pasta dish!!! For reals guys! In the time it took the pot of water to boil we were ready to boil the noodles! This recipe is well worth the extra effort to make a snazzy meal your family will love! The kids loved being helpers and finding super long noodles to slurp!!! A new family hit!!!

Bruschetta Pasta (Vanessa Cartier)

Bruschetta Pasta

I have a quick and delicious pasta dish.

I call it Bruschetta Pasta.

It's just cooked pasta (any kind you like, but I prefer to use spirals, bowties, or penne) Chill the pasta after cooking.

Depending on how much pasta you make add either one or two containers of brushetta mix from Trader Joe's. The kind in the refrigerated section not the jar stuff.

Then make a balsamic vinegar reduction by boiling down some balsamic vinegar until it starts to get thick.

Mix all the ingerdients together and chill. If you would like you can add chicken or even buffalo mozzerella balls. ( I always add a little more fresh garlic to mine because I LOVE garlic, but it may be too much for some people.)

Then serve as a side dish or main dish.

Great for potlucks and BBQ's.

Stuffed Mushrooms (Jessica MacDonald)

Stuffed Mushrooms

  • 1lb of turkey sausage (brown and drain)
  • 2-3 (8 oz pkg) fresh mushrooms chopped (stems only) - reserve caps
  • Salt and pinch of pepper
  • 1/2 cup finely chopped onion
  • 8 oz. cream cheese softened
  • Few drops of hot sauce (like Tabasco)
  • Parmesan cheese
  • optional-parsley flakes for color (2 tsp)
Brown sausage and drain. Saute finely chopped onions. Chop only the mushroom stems and add to meat and onions. Add salt and pepper to taste (if needed - you should have enough spice without). Add softened cream cheese to mixture over low heat and stir until completely mixed together. Remove from heat and fill mushroom caps (rounded full). Sprinkle with parmesan cheese. Broil on a cookie sheet 5-10 minutes.

YUM!
