No Bake Cheesecake with Ladyfingers (Nancee Rose)

No Bake Cheesecake with Ladyfingers 

3 pkgs Ladyfingers
1 – 8oz pkg cream cheese +1 – 3oz pkg cream cheese
1 pint whipping cream
3/4 cup sugar
1 tsp vanilla
Topping: 1 can pie filling or * fresh berries with cooked berry glaze.

1. Line outside edge & bottom of a spring form pan with ladyfingers. (flat sides facing inward)
2. Whip softened cream cheese, add sugar & vanilla. Whip all together.
3. Whip whipping cream, on high, until stiff.
4. Fold whipping cream into cream cheese mixture.
5. Pour half of whipped cream mixture into ladyfinger lined pan. Spread evenly. Place another layer of ladyfingers on top. Pour remainder of  whipped cream  mixture on top.
6. Pour 1 can of berry pie filling on top & chill.

•    For Fresh Strawberry Topping:
1.    32 oz fresh strawberries; rinsed and tops taken off – drained on paper towels
2.     1 cup sugar
3.    2 Tbls corn starch
4.     a small squeeze of fresh lemon juice

 Place 2 cups cleaned & sliced strawberries sugar, corn starch & lemon juice in a sauce pan. Smash berries, stir all ingredients until mixed. Heat on stove over medium heat until thickened. (will appear glossy)  cool.

Pour on top of cheesecake. Place the remainder of whole fresh strawberries on top of cooked berry mixture.

Cover loosely and refrigerate for several hours before  serving.
